  • I really do miss all the post about hunting and wildlife in general. I always looked forward to what some other hunters were doing and showing their success. I don't know what happened but no more posting about wildlife, shooting, outdoors stuff.. I am not innocent about not posting my (harvest) as the PC want to call it, but Big Bother is watching everything on the internet and I don't want someone coming to my door wanting to look in my freezer. Al-tho I am law abiding. SO...that brings me to my original post about venison meatballs. I have a butcher/friend that I take my deer too that does a great job. While there a year or so back my wife said that she had made venison meatballs out of some of the Italian sausage and ground venison that he had made and it lacked something. He said, no no no, you want to use a cheap rolled sausage at about 1/2 lb. to 1 lb. of venison. Well, that's what we have been doing ever since and of course she is not going to use some cheat rolled sausage it's Jimmy Dean for her. Just had it again tonight and I just wanted to pass that little secret along. I hope everyone is staying safe and things will get better.

  • Good on you for bringing this up.
    Around here, hunting and Ford Tractors go together like whiskey and rye.
    I made some spagetti sauce about a week ago.
    Pound of venison burger and a pound of Italian sausage from our local butcher shop. Sausage is a wee bit hot. Just right. Add all the onions, celery, peppers, diced tomatoes, celery, a bit of garlic, fennel seed, salt, pepper and tomato sauce. Cooked it in the old cast iron dutch oven.
    I always like to throw in some snow pea pods just before the batch is done. Leave them a little crunchy.
    Pour it over pasta or here we eat a lot of rice too.
    Froze about half of the sauce for a future thaw and gnaw dinner.
    Our venison supply is getting low.
    I think about 4 lbs of burger left.
    Not a good year for us last year. I hunted 8 days and never saw one deer. Was real odd.
    Guy I hunt with saw a few does and fawns and finally took a big doe the last day so we got half of that.
    About 152 days till the rifle opener here.
    Always looking forward to deer camp.

  • Sounds like you have all the right ingredients going into that sauce. My wife goes the easier route and uses the premixed Classico pasta sauce (Traditional Flavor)...I'm not complaining. I had a good season, got 2 does for us and had them processed...mostly in burger (some with fat added and some not)I use the lean for making jerky or add some olive oil to it and use it as you wish. I got a nice buck and had it processed in 1 lb. burger packages and took it to the shelter to feed the hungry. They really appreciate getting that stuff. I also am looking forward to this season....altho I'll miss Farmer Dan comments.
