You should always use a thermostat. Often overheating is caused by overfilling or underfilling. Is it original 6V/POS GRN or a 12V switchover job? Either way, have you checked the fan belt tension? Do you have the correct fan belt? Often times 12V jobs use the wrong fan belt. Does the radiator leak?
