Something I tried a few years ago, just to see how it looked. Steering wheel was missing some chunks, not completely stripped bare. I used some 2-part epoxy, the kind you kneed together. Once set up, I was able to use a file to form the knobs and smooth out the radius. Looked passable when completed.
