You got it right! An old Polish butcher told me years ago to quit mixing pork with my venison hamberger and switch to 70% ground beef. Mix it 25 to 30 percent and it with give it the perfect blend of fat, and hold the meat together better.
Dont go any leaner than 70%. It gives flavor and texture and cant be beat.
