Basically any dish using beef you can substitute venison, elk, moose, caribou, antelope, buffalo, and other meats. Many 'wild game' recipes call for a ton of ingredients that end up masking the flavor of the meat. When the game is prepared correctly, you can eliminate the 'gamey' taste. Trim all white tissue, fat, tendons, et al and you'll get excellent table fare. We'd have categories of course -fish, waterfowl, upland birds, turkey, deer/elk/venison group, and others exotics.
