The Discs with the springs are designed to help elimate shock loads on drive train components. The springs can over time disentegrate but will usually not fall out and keep on working. The original without the springs can also fail by the rivets holding the hub to shear off over time. No big deal which ever you use.
The new or rebuilt pressure plate will be set up already and no need to adjust anything.
